When adding text with the text tool in the Preview window, the text has a drop shadow. Can I change the settings so that normal text appears?

You sure can. Look at the bottom of your Tools palette in the Preview window - you should find a checkbox marked "Drop Shadow." Increase the size of your Preview window if you don't. Just clear the checkbox, and you're good to go.
